Worked great for cupcakes with some changes December 23, 2008 E. Karasik (Washington, DC United States) I seem to be incapable of following recipes the letter, but I used this mix as the base for gingerbread cupcakes (using the variation on the package that calls for molasses). I followed the directions fairly closely, but I added a little extra ginger powder and a dash of allspice and powdered cloves. I also used two small eggs instead of the one egg plus one egg white, and I used extra virgin olive oil (fortunately, as I had hoped, the olive oil taste was not detectable over the strong spices). There was enough batter for 12 cupcakes; I topped them with some chopped crystalized ginger and sugar just before baking. The baking time in my new oven was 25 minutes rather than the 15-17 minutes stated on the box (for cupcakes). But the final product was fragrant, moist, and quite delicious. My only criticism would be that the texture is very fine, whereas I like gingerbread with a little more density and coarseness, but I am guessing that this is due to the absence of gluten.
absolutely delicious December 6, 2008 mom 94 (b-ville, ny) The best Spice Cake I have been able to have since I was diagnosed with Celiac almost a year ago. Superb with warm applesauce over it or on the side. I have not had it frosted yet, but I am sure it will be just a good!
If the kids make it, they usually eat it... May 3, 2008 Tanya Gunby (Seattle, WA) I'm having trouble getting my 3 year old autistic son to eat anything, let alone gluten-free. I decided to get a pre-made mix and have him make it with me. It took him a little bit to pay attention, but he got pretty excited about the whole thing. And he actually ate it! It's a good tasting product.

This is just okay! Not the zing and wow I want in spice cake. I know that next time I make this I will definitely spice it up and see how that works. If not so well, they'll end up going on my local freecycle.
